I'm pretty sure you can :) The only tricky thing is halving the eggs since you would need 1.5 large egg whites. It'll be easier if you use a scale. Each large egg whites is about 30 grams so you will need 45 grams of egg whites in a half batch. Let me know if you have any more questions!
